Warm pancakes with honey or chocolate syrup topping are just what you need to warm up your mornings in a mouth-watering way. But this time you need your mum’s help in cooking as the pancakes have to be cooked on the stove and you know fire can be dangerous. You can easily make about six large or eight medium-sized pancakes with this recipe.
Ingredients:
• 2 large eggs, lightly beaten
• 2 cups milk
• 4 tbsp vegetable oil
• 2 cups flour
• 4 tbsp sugar
• 4 tbsp coco powder
• 4 tsp baking powder
• 1/2 tsp vanilla or chocolate essence
Directions
In a large mixing bowl, whisk eggs. Add milk and vegetable oil and beat with a wire whisk until foamy.
In another mixing bowl, add flour, sugar, baking powder and coco powder, then mix thoroughly with a spoon. Now add all the dry ingredients to the egg mixture and beat with the whisk until the batter is smooth.
Set the batter aside for a few minutes to allow the baking powder to work and rise slightly in the bowl and form a few bubbles on the surface.
Heat a non-stick frying pan to medium-low. Add about a teaspoon of oil and pour about 1/4 cup of the batter. Work in small batches — the pancakes will spread out as they cook.
When the surface of the pancakes begins to bubble and the edges appear dry, flip the pancakes with a spatula. Cook for another minute or so, until the edges are completely done and the pancakes are golden brown.
Transfer finished pancakes to a serving plate. Top with just castor sugar or chocolate syrup or honey and enjoy the delicious chocolate pancake. You can also top it with banana slices or any other fruit of your choice for a wholesome meal.
