Ingredients:
• 1 egg
• 4 tablespoons sugar, heaped
• 4 tablespoons flour
• 1/4 teaspoon baking powder
• 2 tablespoon butter/oil (I used oil)
• 2 tablespoons M&Ms
• 1/4 teaspoon vanilla essence
• Topping: Whipped cream and more M&Ms – or anything you like!
Directions:
Mix all the dry ingredients in a small bowl, then add all the wet ingredients, including egg. Mix again till it is smooth and there are no lumps left. Now add M&Ms, as many as you want, just leave a few to put on top just before cooking.
You can transfer it into another cup if you want or just cook in the same bowl. I like to mix my things in a small bowl and then cook it in a mug as the mixing bowl can get a bit messy and sticky. Now cook in the microwave for one minute and 30 seconds to two minutes. You can stop and check it at one and a half minutes, if it is firm from the centre and not too wet, then the cake is done. If your cake is well set but too chewy to eat, then it is probably overcooked a bit so next time you can reduce the timing.
You are likely to find some of the M&Ms settled at the bottom, which makes the base very chocolaty and yummy, and that’s why we saved some M&Ms for the top at the end. If you like you can put the M&Ms only at the top at the end so that few sink at the bottom.
