Cook-it-yourself: Pizza patties

Eid Mubarak everyone! This great festival is all about food, food and food! We have been bringing you easy recipes that you have made and enjoyed eating yourself, this time we will tell you a super simple savoury snack that you can serve your guests this Eid.

We are making pizza patties in the easiest way possible and with the yummiest result. You just need readymade frozen puff pastry, which you can buy from any good grocery store or bakery, and some things easily available at home, and it should be ready in less than half an hour in all.

Ingredients

• 500g puff pastry

• 1 cup grated cheese, mozzarella or cheddar

• 1 cup chicken tikka chunks or cooked chicken/beef of any flavour

• 1/2 cup spring onions, chopped

• 1/2 cup capsicums, chopped

• 1/2 cup tomatoes, chopped

• 1/2 cup chilli garlic sauce or tomato ketchup

• 1 egg beaten, for egg wash

Method

Preheat oven to 200 degrees centigrade.

Let the puff pastry thaw to almost room temperature and take a palm-size piece and roll it out into a layer that is not too thin or thick. Take a bottle cap or a glass larger than the size of your cupcake baking tray slots. Use this to cut circular pieces of the pastry dough, roll the remaining into a ball and roll it out into a layer again and cut, until one ball of the dough remains.

After rolling out the final dough piece, take a knife and cut inch-wide strips and keep aside.

Take circular pieces of dough and lay them carefully in the cupcake tray slots, pressing gently with fingers so that no air remains underneath.

Spread chilli garlic sauce or tomato ketchup (I used chili garlic sauce to get a spicy taste), put about one tablespoon of chicken tikka chunks, 1/2 tablespoon of spring onions, 1/2 tablespoon of capsicum and 1/2 tablespoon of tomato pieces. Finally top with one tablespoon of cheese.

Take the strip and press one end to the edge of the puff pastry bottom layer in the baking tray. Press or pinch the other end of the strip to the opposite edge of the bottom layer to seal the two together so that they don’t come apart while baking. Do this till you have almost covered the top of the puff pastry cups with six strips.

Beat an egg in a bowl and coat the top of the pizza cups with this egg wash. Bake in a preheated oven for about 12 to 15 minutes, till it is light golden from the bottom. Now turn on the top grill of the oven and bake for a couple of minutes or more to get a golden colour on top.

Leave for five minutes in the baking tray to cool and take it out to serve warm. It can be reheated in the oven before serving if you are going to serve it later.

Note: Please ask an adult to handle the oven and cutting part of this recipe so that you don’t hurt yourself.
