Cook-it-yourself: Bread baskets

Here is a light and easy breakfast and snack recipe that you can easily make on your own, with a little help from an adult in handling the oven. Bread baskets are very versatile in which you can add anything that you want to eat or anything that is in your fridge, along with the regular ingredients of bread, egg and cheese. I have kept it simple but you can add different vegetables and cooked meat pieces too.

Ingredients

• 6 bread slices

• 2 eggs

• 1/8 teaspoon salt

• 1/8 teaspoon black pepper

• 2 tablespoons milk

• 4 tablespoons cheese, grated

Method

Preheat oven at 200 degrees Centigrade.

With a rolling pin, roll the bread slices and take a large round cutter or bottle top and cut it into circles that are larger than the slots of a muffin tray.

Add salt, pepper and milk to the eggs and mix well. Now gently press the bread circles into the muffin tray slots to form a cup. Add egg with a spoon to fill up to two-third of the bread cups. Add about a teaspoon of cheese and bake at 200 degrees Centigrade for about 12 to 15 minutes until the bread turns a bit golden from the sides and the egg and cheese mixture is cooked and set.

Take out from the oven and leave for 10 minutes to cool in the baking tray. With a knife, gently dislodge the sides of the break baskets from the tray and take it out. You can enjoy it as it is or add a touch of ketchup. So light and healthy!
