Cook-it-yourself: Mango cup cake

I think the only reasons we all look forward to summers is vacation and mangoes. And now that both of these are here, enjoy the heavenly flavours of mango by eating it in as many ways as you like.

Here is a quick and easy recipe of mango cup cake that you can make yourself in the microwave and, since it is a cup cake, you can eat it all by yourself too!

So let’s get started!

Ingredients

• 4 tablespoons flour

• 4 tablespoons sugar

• 4 tablespoons mango pulp

• 4 tablespoons milk

• 1 tablespoon oil

• 1/2 teaspoon baking soda

Method

Using a microwave-proof cup, add mango pulp, milk and oil. Using a fork, stir a bit and then add all the dry ingredients. Now stir very well so that there are no lumps and the baking soda mixes very well.

Microwave for 90 seconds for a soft, moist texture, but if you want it a little more firm and dry, microwave for two full minutes.

Now sprinkle some mango pieces and castor sugar on top and enjoy this warm heavenly mango treat. You can top it with an ice cream scoop or any syrup that you fancy.
