I am a fan of mug cakes and meals. I love trying out new mug recipes mainly because they are easy to make and great for those odd times when you need to have just a little bit of something nice. And you can easily make these without taking anyone’s help and usually with the ingredients available at home.

When I came across the recipe I am sharing today, it claimed to be the ‘moistest chocolate mug cake’ and I didn’t really believe the claim until I tasted it. Yes, it is the moistest chocolate mug cake I have ever made or tasted. Actually it is the yummiest chocolate mug cake ever!

Many mug cakes and desserts are disasters because not all recipes can get the right blend of ingredients in tablespoons to offer the perfect taste and texture. And there is always the chance of overcooking in microwave where even five or 10 seconds extra can make the texture hard and dry.

I followed the recipe faithfully and it said to cook for 70 seconds, which I did. But the centre was very wet so I cooked some more, a total of two minutes, to get it fully cooked, but a little on the moist side. So you can start with 70 seconds and if you need to cook it more (which you will know if you just dig inside with a spoon to see if it is cooked through) then cook for 10 or 20 seconds at a time until it is done.

Ingredients

• 1/4 cup flour

• 2 tablespoons unsweetened cocoa powder

• 1/4 teaspoon baking powder

• 3 tablespoons granulated sugar

• 1/8 teaspoon salt

• 1/4 cup + 1 tbsp milk

• 2 tablespoons vegetable oil

• 1 tablespoon mini chocolate chips

Method

In a medium bowl, whisk together the dry ingredients. Then whisk in the oil, milk and combine the batter well.

Pour batter into a microwave-safe mug, which should be a little more than half full to give the cake enough space to rise without pouring over.

Add mini chocolate chips on the top of the batter.

Microwave 70 seconds on high. Take it out and see if it is cooked through, otherwise cook for 20 seconds more. Mine took two minutes to cook.

Give it a few minutes to cook and enjoy just as it is! There is no need for any icing or topping, unless you feel like it.
