Cook-it-yourself: Cheesy chicken patties

Puff pasties are easy to use and they cook very fast so they make for the perfect ingredient to always stock in your refrigerator. Today I am sharing an easy way to make chicken patties, with a few simple things that we always have in the house. Only the cheese is a luxury item that you can skip if you do not have it and the end result will still be mouth-watering.

You can add or remove any of the vegetables I have used and substitute with what you want to have, such as carrots, boiled eggs, macaroni, etc. The chicken I used was simply boiled and shredded, but you can also use cooked chicken chunks you get in stores or even shred some leftover chicken from last night’s curry.

Ingredients

• 500g puff pastry dough, store bought

• 1 cup boiled chicken, shredded

• 2 tablespoons cheese, shredded

• 4 tablespoons mayonnaise

• 1 tablespoon capsicum

• 1 tablespoon tomatoes

• 1 tablespoon spring onions

• 1 teaspoon black pepper

• 1/2 teaspoon salt

Method,

Cut the dough into half and roll out, I cut it up to make sure it fit on my rolling board. If you have a larger working area, you can roll out the whole dough. Keep the thickness as desired, a thicker layer will give you a very fluffy and thick crust, and a thinner one will result in a thinner crust.

Cut out circles with a bottle cap or cup, which should be larger than the size of the slots of the baking tray so that the dough can be lined well to form a cup. Carefully line the slots with the cut-up dough, pressing to the base and the sides to set it like a cup shell.

Cut out an equal number of circles a little smaller in size, according to the size of the top of the baking slot of the tray, so that it just covers the top after you have filled it with the chicken filling.

Mix together all the ingredients; adjust the seasoning according to your taste. You can also add the mayonnaise according to how moist you want the filling. Now fill the inside of the layered dough with the chicken mixture. Cover with the smaller dough circle, press the edges gently with fingers or the back of a spoon.

Beat an egg in a small bowl and brush the top, poke a few holes with a fork and it is ready to go into the oven.

Bake for 12-15 minutes, just check the sides to see if the edges are cooked. Then use the top grill to brown the top of the patties, which should take about three to five minutes.

Serve hot. I made about 13 patties from these ingredients.
