Cook-it-yourself: Ice cream cake

What I am going to share today can’t be traditionally called a recipe because we are going to use ready-made stuff to create something very tasty — an ice cream cake!

Well those who like spending hours in the kitchen can of course make everything from scratch. For that they can check out the easy homemade ice cream recipes that have been shared in this column earlier, or from any recipe site, and any simple cake, plain or chocolate, and use those.

I bought vanilla ice cream and a chocolate cake, with bits of walnuts in it, their combination was such a hit. You can use any flavour that you enjoy having, and also use a mould of any shape that you have. Since I had a bread mould of about 10 inches in length, I used that.

If you want to add more flavour to it, use fresh cream for topping before serving it or add chocolate chips, canned or fresh fruits, when setting the cake and ice cream in the mould to add more flavour to it.

Ingredients

• Vanilla ice cream pack — large (800ml)

• Chocolate cake loaf — 1/2 pound

• Chocolate sprinkles

Method

Line a cake mould with plastic cling film, leaving the edges outside so that the finished ice cream cake is easy to take out later on.

Using softened ice cream, line the bottom of the mould with ice cream. Cut the cake into medium-sized pieces and line them in the centre of the mould, leaving just enough space on the sides so that a nice layer of ice cream can be poured there.

Next, cover the sides and top of the cake with the remaining ice cream. Give the mould a gentle tap to let any air bubble out. Now you have your cake nicely in the centre and covered on four sides with ice cream.

Cover it with another layer of cling film or aluminium foil to make it air tight, and freeze at least over night or until well-frozen and firm.

Take it out and in a minute it will be ready to come out cleanly when you gently pull from the sides the cling film that you first lined the mould with. Quickly top with sprinkles or anything else you want, like fresh fruits, and serve immediately.

It is also a great option for a birthday cake if you are looking for something different.
