Cook-it-yourself: Breakfast mug casserole

Breakfast is the most important meal of the day, but the most neglected by us. In my case, when I don’t find something very interesting, I usually end up skipping it or making something for myself. And I usually cook it in my favourite way — in the microwave — because I like quick and easy recipes, such a mug meals.

So today I will be sharing the recipe of breakfast mug casserole that has all the healthy nutrition one needs to start the day with, such as egg, milk, carrots and cheese. You can add other food items according to your taste, about a tablespoon of each, for instance, spring onions, tomatoes, cooked meat.

This is a really light, fluffy and yummy breakfast treat that will warm up your cold mornings.

Ingredients

• 2 eggs

• 1/4 cup milk

• 2 tablespoons cheese, grated or in small pieces

• 1 teaspoon oil

• 2 tablespoon carrots, cubed

• 1 medium potato, cubed and boiled

• 1/4 teaspoon salt

• 1/4 teaspoon black pepper

Method

In a large microwave mug, coarsely crush the potatoes with a fork. You can use a small bowl too if you do not have a mug, but do not use a regular-sized mug as this expands a lot on cooking.

Add eggs, milk, cheese, carrots, salt and black pepper and mix well enough for everything to blend.

Cook in the microwave for two minutes, if the centre is still too soft, cook it for 30 seconds or so, till it is set.

Do not start eating it at once as it is going to be too hot on the inside. Take out a spoonful, and let it rest for a couple of minutes before enjoying this delicious new twist to an egg meal — definitely better than a regular fried egg or omelette.

For the whole family, you can multiply the recipe by four, and bake in an 8×8 inch baking dish for 25-35 minutes, or until eggs are set.
