Cook-it-yourself: Banana pancake
Food and experiments in the kitchen are keeping me sane these days at home. There really isn’t anything much to do and all that we can do, we have done it a zillion times. Only our tummy is an insatiable fellow that just doesn’t get tired of eating, but we do get tired of eating the same things too often. So the urge to eat something different and new hits us often.
So to make our breakfast more interesting, here is an easy recipe of banana pancake, with just two ingredients — eggs and bananas — and anything else for topping that you want. I opted for a light flake of butter and a lavish topping of honey, with a few pieces of bananas for good measure.
But don’t attempt it all alone in the kitchen if you do not handle stove on your own, just get the batter ready and ask an adult to cook it for you.
Ingredients
• 1 egg
• 2 bananas
• Butter and honey for topping
Method
Mash the banana in a small bowl. If your bananas are very large, just use one. Now add the egg and whisk it well, but you don’t have to do it for too long.
In a non-stick pan, add a little oil and pour half the batter. Cook on low heat until you can see that it has cooked from the sides and bubbles are forming on the top and the mixture is not too runny. If you cook on high heat, the lower part will cook too fast and the top will be very fluid which will run over when you try to turn it.
Now carefully turn the pancake to cook the other side too, still on low heat.
Remove and top with butter and honey, or anything else you fancy.
This should make about two pancakes, but the quantity depends on the size of the egg and bananas you are using.
You can try using any other fruits too, such as mangoes that are aplenty now.
