Cook-it-yourself: Mango pound cake

Mangoes are the must-have ingredient in everything these days, so that’s why here is the recipe of mango cake, which is very simple, since pound cakes are supposed to be very simple.

And the best part is that you can use over ripe mango for this, which no one wants to eat as it becomes too soft.

Ingredients

• 2 cups flour

• 1 1/4 cup sugar

• 4 eggs

• 1 tsp baking powder

• 1/2 tsp baking soda

• 1/2 cup oil

• 1/2 cup fresh mango puree

• 1 tsp vanilla extract/essence

Method

Preheat the oven at 200 degrees centigrade.

Sieve the flour, baking powder and baking soda. Add sugar and stir it using a spoon or spatula. Keep it aside.

This recipe can be made by using an electric or hand mixture, where you first mix together all the wet ingredients and then add mango puree. But I used a food processor since I used mango chunks and had to puree it first, so I mixed the ingredients in it.

Add mango chunks in the food processor; puree it for a few seconds. Add oil and vanilla essence and mix it again.

Now add a few tablespoons at a time of the dry ingredients and mix, until all are combined. Don’t over mix at this stage.

Take a bundt cake pan or you can use a pan of any other shape. Oil it and dust it lightly with flour. Pour the mixture into it and ask an adult to bake for 50-60 minutes.

Check the cake by inserting a toothpick in the centre to see if it comes out clean.

After taking it out, let it remain in the pan for about 10 minutes to cool. You can have it as it is or frost it in anyway.

I used a simple sugar and milk frosting. This needs to be done by an adult as it is over stove and the frosting is very hot and should not be touched at all. I used one cup of icing sugar and two tablespoons of milk. Heat them together, the sugar will melt and just when it starts to thicken, pour it over the cake.
