Cook-it-yourself: Chocolate malt mug cake

As much as I enjoy making mug cakes, I don’t always enjoy eating them as much, because there have been times when the cakes have turned out too hard and dry, and the taste very unappetising. Finding the right recipe and the right duration of cooking time takes both time and trials.

So when I started out trying this recipe of a chocolate malt mug cake, I was apprehensive. “Is it going to taste like concrete? Do I need to dump loads of chocolate sauce on it for flavour and moisture?” I kept asking myself as I went on following the recipe faithfully.

But I shouldn’t have worried, as this mug cake was so very delicious and moist, better than a regular chocolate mug cake. A malt drink powder, along with cocoa powder, added a very deliciously different touch, along with more nutritional value, to it. I am sure you never thought you could have Milo or any other nutritious drinking powder this way!

This is now going to be one of my favourite go-to mug cake recipes. Why not make it yours too, by trying out this recipe this weekend?

Ingredients

• 1 egg
• 2 tablespoons flour
• 2 tablespoons Milo/Bournvita powder
• 2 tablespoons sugar
• 1 tablespoons cocoa
• 2 tablespoons oil
• 2 tablespoons milk
• 1/4 teaspoon baking powder
• 1/4 teaspoon vanilla essence

Method

In a microwave proof cup, mix eggs, oil and milk. Now add the dry ingredients — flour, Milo powder, sugar, cocoa powder and baking powder. Add a few drops of vanilla essence and mix with a fork to a smooth consistency.

Microwave at medium heat for one minute. Do not overcook or the cake will become hard and dry.

Let it cook for five minutes, do not start eating immediately as it will be very hot from the inside. Top with a scoop of vanilla ice cream and chocolate sauce, like I did, or with anything else that you want.
