Cook-it-yourself: Banana cookie

Bringing together unusual ingredients can sometimes lead to interesting results, just like this banana cookie, which is made using some banana (of course), peanut butter and Bournvita chocolate drink powder. Interesting and unusual, isn’t it?

The result was a soft chewy cookie. I used a round oven-proof dish cover to bake so it is more of a cookie, you can make it in a small square pan too and call it a brownie! Why not?

I believe it is the cook’s right to name the dish in any way they like, especially if they have experimented with ingredients to cook up something different — like I mostly do!

The flavour is a bit nutty and salty, so those looking for a sweeter bite can add a couple of tablespoons or more of sugar to suit their sweet tooth.

Let’s see how to make this very easy and healthy cookie.

Ingredients

• 3 ripe large banana, or 4 if they are small
• 1/2 cup peanut butter
• 1/2 cup Bournvita chocolate drink powder
• 1/2 teaspoon baking powder
• Chocolate chips

Method

Preheat oven to 180°C (350°F) and fold a brownie pan with parchment paper. Mash the ripe bananas in a bowl. If the bananas are medium-sized, use four bananas.

Add any sweet drinking chocolate powder, if you don’t have one, then you can also use cocoa powder but then you will have to add 1/4 cup of sugar too. Add baking powder and mix with hand or an electric beater. Transfer to an oiled small round pan or an oven-proof dish like I have used. Spread evenly with a spatula and top with some chocolate chips.

Bake in hot oven for 25 to 30 minutes. Let it cool completely at room temperature before slicing.
